Farms & Farmschool

The Fattoria Barbialla Nuova farm supplies the meat for our restaurant, white truffles, and game. The certified organic Chianina cattle farm, registered with the PGI 5R certification system, manages a semi-wild herd of approximately 100 animals. 15 hectares of private truffle grounds with restricted harvesting provide white truffles under the Colline Sanminiatesi brand. Wild boar, fallow deer, roe deer, and wood pigeon are hunted in the our game reserve, processed, and certified by our own butcher.

Did you know that we use the whole animal in our restaurant? That is one of the reasons our menu changes daily. Our chefs create the menu around the animal. We respect every cut.
